Ingredients

  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 pound chicken breast, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, garlic, and ginger until combined.
  2. Heat the vegetable oil in a large pan over medium heat.
  3. Once hot, add the diced chicken and cook until browned and no longer pink in the center.
  4. Pour the sauce mixture over the chicken, cooking until it thickens and coats the chicken beautifully.
  5. Serve the sticky chicken over the cooked rice. Garnish with sliced green onions and a sprinkle of sesame seeds.

Notes

For added crunch, you can include vegetables like bell peppers or snap peas during the last few minutes of cooking.
