  • Total Time: 40 minutes
  • Yield: 4 servings 1x
  • Diet: None

Description

Quick and budget-friendly sticky chicken rice bowls marinated in a sweet-savory sauce with garlic and ginger.

Ingredients

Scale
  • 2 cups cooked rice (white or brown)
  • 1 lb chicken breast, diced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 cup green onions, chopped for topping
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make a marinade.
  2. Add the diced chicken to the marinade, ensuring it’s well-coated, and let it marinate for at least 30 minutes (or longer for extra flavor).
  3. Heat a skillet over medium heat and cook the marinated chicken until it’s cooked through, about 5-7 minutes.
  4. Spoon the cooked chicken over a bed of rice.
  5. Drizzle with any remaining sauce from the skillet, then top with chopped green onions and a sprinkle of sesame seeds.
  6. Enjoy your sticky chicken rice bowls!

Notes

For extra flavor, marinate the chicken longer. Feel free to swap chicken for tofu or shrimp for a different protein option.
