Instructions
- In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make a marinade.
- Add the diced chicken to the marinade, ensuring it’s well-coated, and let it marinate for at least 30 minutes (or longer for extra flavor).
- Heat a skillet over medium heat and cook the marinated chicken until it’s cooked through, about 5-7 minutes.
- Spoon the cooked chicken over a bed of rice.
- Drizzle with any remaining sauce from the skillet, then top with chopped green onions and a sprinkle of sesame seeds.
