Ingredients

- 2 cups cooked rice (white or brown)
- 1 lb chicken breast, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar (or substitute with apple cider vinegar or white vinegar)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1/2 teaspoon ginger, grated
- Green onions, chopped (for garnish)
Instructions
- In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger, mixing until well combined.
- Add the diced chicken to the marinade. Allow it to marinate for at least 30 minutes.
- Heat a skillet over medium heat and cook the marinated chicken until fully cooked and glazed, about 7-10 minutes.
- Serve the chicken on a bed of cooked rice, drizzled with any remaining sauce and topped with chopped green onions.
Notes
For deeper flavor, marinate the chicken longer, up to 24 hours. Store leftovers in an airtight container for up to 3 days.
