A moist and zesty lemon loaf that captures the perfect balance of sweetness and tanginess, inspired by the beloved Starbucks treat.

- 1 ½ cups all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 3 large eggs
- 1 cup granulated sugar
- ½ cup sour cream or Greek yogurt
- ½ cup vegetable oil
- 2 tbsp unsalted butter, melted
- 2 tbsp lemon zest (from about 2 lemons)
- ¼ cup fresh lemon juice
- 1 tsp vanilla extract
- ½ tsp lemon extract
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice (for the glaze)
- ½ tsp lemon zest (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
- In a large mixing bowl, whisk the eggs, sugar, sour cream, vegetable oil, and melted butter until smooth.
- Mix in the lemon zest, lemon juice, vanilla extract, and lemon extract until fully combined.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and 2-3 tablespoons of lemon juice until smooth. Once the loaf is completely cool, drizzle the glaze over it and add lemon zest for garnish if desired.
Notes
Best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days. For longer storage, freeze slices wrapped in plastic wrap.
