Description

These delightful Starbucks Copycat Birthday Cake Pops combine nostalgia and celebration, making them perfect for any occasion.


Ingredients

  • 1 box of vanilla cake mix (13.25 oz)
  • ⅓ cup neutral oil (vegetable, avocado, or canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp milk (add more if needed)
  • 12 oz candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat the oven to 325-350℉ (162-175℃).
  2. In a large bowl, combine the cake mix, oil, milk (or water), eggs, and softened butter. Mix until well blended.
  3. Pour the batter into a greased or lined baking pan and bake according to the cake box instructions.
  4. Check for doneness 2-4 minutes before the baking time ends by inserting a toothpick into the center. If it comes out clean, it’s ready.
  5. Transfer the hot cake to a mixing bowl and crumble on low speed until no large pieces remain.
  6. In a separate bowl, mix all buttercream ingredients until smooth. Combine with crumbled cake until fully incorporated.
  7. Roll the cake mixture into 1¼-inch balls (approx. 30g each) and chill in the freezer for 15 minutes.
  8. Let them come to room temperature for 10 minutes while melting the candy melts according to package instructions.
  9. Dip the tip of each lollipop stick into melted candy, then insert it into each cake ball halfway.
  10. Chill the pops in the freezer for another 15 minutes.
  11. Melt remaining candy melts until smooth. Dip each cake pop, ensuring it is fully submerged, then tap off excess.
  12. Add sprinkles or nonpareils quickly before the coating dries. Place on a styrofoam block to stand upright while setting.

Notes

Store cake pops in an airtight container at room temperature for up to three days. For longer storage, refrigerate for up to a week or freeze individually wrapped.
