These delightful Starbucks Copycat Birthday Cake Pops combine nostalgia and celebration, making them perfect for any occasion.
Ingredients

- 1 box of vanilla cake mix (13.25 oz)
- ⅓ cup neutral oil (vegetable, avocado, or canola)
- 1 cup milk or water
- 4 large eggs
- ¼ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 tsp milk (add more if needed)
- 12 oz candy melts
- White nonpareils or sprinkles
Instructions
- Preheat the oven to 325-350℉ (162-175℃).
- In a large bowl, combine the cake mix, oil, milk (or water), eggs, and softened butter. Mix until well blended.
- Pour the batter into a greased or lined baking pan and bake according to the cake box instructions.
- Check for doneness 2-4 minutes before the baking time ends by inserting a toothpick into the center. If it comes out clean, it’s ready.
- Transfer the hot cake to a mixing bowl and crumble on low speed until no large pieces remain.
- In a separate bowl, mix all buttercream ingredients until smooth. Combine with crumbled cake until fully incorporated.
- Roll the cake mixture into 1¼-inch balls (approx. 30g each) and chill in the freezer for 15 minutes.
- Let them come to room temperature for 10 minutes while melting the candy melts according to package instructions.
- Dip the tip of each lollipop stick into melted candy, then insert it into each cake ball halfway.
- Chill the pops in the freezer for another 15 minutes.
- Melt remaining candy melts until smooth. Dip each cake pop, ensuring it is fully submerged, then tap off excess.
- Add sprinkles or nonpareils quickly before the coating dries. Place on a styrofoam block to stand upright while setting.
Notes
Store cake pops in an airtight container at room temperature for up to three days. For longer storage, refrigerate for up to a week or freeze individually wrapped.
