  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray.
  2. In a bowl, mix the chopped spinach, cream cheese, mozzarella, Parmesan cheese, and minced garlic until well combined.
  3. Take each chicken breast and make a pocket by slicing it horizontally, being careful not to cut all the way through.
  4. Season both sides of the chicken breasts with salt and pepper.
  5. Stuff each breast with the spinach mixture, then secure with toothpicks or kitchen twine.
  6. Heat olive oil in a skillet over medium-high heat. Brown each stuffed chicken breast on both sides for about 4-5 minutes.
  7. Transfer to the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
