- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- Olive oil, salt, and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray.
- In a bowl, mix the chopped spinach, cream cheese, mozzarella, Parmesan cheese, and minced garlic until well combined.
- Take each chicken breast and make a pocket by slicing it horizontally, being careful not to cut all the way through.
- Season both sides of the chicken breasts with salt and pepper.
- Stuff each breast with the spinach mixture, then secure with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium-high heat. Brown each stuffed chicken breast on both sides for about 4-5 minutes.
- Transfer to the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Remove the toothpicks and let rest before serving. Enjoy your flavorful creation!
