- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, cream cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until smooth.
- Butterfly the chicken breasts by slicing them horizontally, making sure not to cut all the way through.
- Open each chicken breast like a book and stuff them with the spinach mixture. Secure with toothpicks if needed.
- Place the stuffed chicken breasts on a greased baking sheet. Drizzle with olive oil and season with additional salt and pepper.
- Bake for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Allow to rest for 5 minutes before serving.
