Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, cream cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until smooth.
  3. Butterfly the chicken breasts by slicing them horizontally, making sure not to cut all the way through.
  4. Open each chicken breast like a book and stuff them with the spinach mixture. Secure with toothpicks if needed.
  5. Place the stuffed chicken breasts on a greased baking sheet. Drizzle with olive oil and season with additional salt and pepper.
  6. Bake for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Allow to rest for 5 minutes before serving.
