- 8 oz fettuccine or pasta of choice
- 1 tbsp olive oil
- 1 lb sausage (Italian or your choice)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 5 to 7 minutes.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in fresh spinach and cook until wilted, about 2 to 3 minutes.
- Pour in heavy cream and bring to a light simmer.
- Add Parmesan cheese, salt, and pepper; stir until cheese is melted and sauce thickens, about 2 to 3 minutes.
- Toss in the cooked pasta until well coated.
- Serve warm, garnished with more Parmesan cheese and black pepper if desired.
