Ingredients

  • 8 oz fettuccine or pasta of choice
  • 1 tbsp olive oil
  • 1 lb sausage (Italian or your choice)
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 5 to 7 minutes.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in fresh spinach and cook until wilted, about 2 to 3 minutes.
  5. Pour in heavy cream and bring to a light simmer.
  6. Add Parmesan cheese, salt, and pepper; stir until cheese is melted and sauce thickens, about 2 to 3 minutes.
  7. Toss in the cooked pasta until well coated.
  8. Serve warm, garnished with more Parmesan cheese and black pepper if desired.
