Spinach and Ricotta Stuffed Shells

Description

Warm, cheesy stuffed shells filled with creamy ricotta and fresh spinach, smothered in marinara sauce.


Ingredients

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup spinach, cooked and chopped (fresh or frozen)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 jar marinara sauce
  • 1 egg
  • Salt and pepper to taste
  • Olive oil (optional for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to the package instructions until they are al dente. Drain and set aside.
  3. In a large bowl, mix the ricotta cheese, cooked spinach, mozzarella cheese, Parmesan cheese, egg, salt, and pepper until everything is well combined.
  4. Carefully stuff each pasta shell with the delicious spinach and ricotta mixture.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Place the stuffed shells in the dish and pour the remaining marinara sauce over the top.
  7. If desired, sprinkle additional mozzarella cheese on top.
  8. Cover the dish with foil and bake for 25 minutes; then, uncover and bake for another 10 minutes, or until the cheese is bubbly and golden.
  9. Let the dish cool for a few minutes before serving.

Notes

Serve alongside a fresh garden salad or garlic bread. Consider garnishing with fresh basil or parsley.
