Description

A delicious comfort food that combines tender pasta shells with a creamy filling of ricotta and fresh spinach, all topped with marinara sauce and melted mozzarella.


Ingredients

  • 12 large pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach (chopped)
  • 1 cup mozzarella cheese (shredded)
  • ½ cup Parmesan cheese (grated)
  • 1 egg
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • Fresh basil (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package directions until al dente; drain and set aside.
  3. In a large bowl, mix together ricotta cheese, chopped fresh spinach, shredded mozzarella, grated Parmesan, egg, minced garlic, salt, and pepper.
  4. Stuff each shell with the spinach and ricotta mixture.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the dish, then top with more marinara sauce and sprinkle with additional mozzarella cheese.
  7. Cover the dish with foil and bake for 25 minutes; remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
  8. Let cool for a few minutes, then serve, garnished with basil if desired.

Notes

You can use frozen spinach instead of fresh; make sure to squeeze out excess moisture. Additional spices can be added to enhance flavor.
