- 1 cup ricotta cheese
- 1 cup fresh spinach, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1/2 cup breadcrumbs (plus extra for coating)
- Olive oil spray
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, salt, pepper, and the egg. Mix until thoroughly combined.
- Add 1/2 cup of breadcrumbs to the mixture and stir until it forms a sticky dough. If needed, add more breadcrumbs to achieve your desired consistency.
- Roll the mixture into small balls, about 1-2 inches in diameter. Coat each ball in additional breadcrumbs for an even crunchy crust.
- Arrange the bites on the prepared baking sheet, making sure to space them slightly apart. Lightly spray with olive oil.
- Bake for 15-20 minutes, turning halfway through, until golden brown and crispy.
- Serve warm, optionally with marinara sauce for dipping.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Freeze uncooked bites for later use.
