- 1 bag frozen chopped spinach (10 oz), thawed and squeezed dry
- 1 block cream cheese (8 oz), softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional for heat)
- 1 sheet puff pastry, thawed but still cold
- 1 egg (for brushing)
Instructions
- In a large bowl, combine the cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Fold in the drained spinach until well mixed.
- Lightly flour your countertop and roll out the puff pastry sheet. Spread the spinach mixture evenly over it, leaving one long edge empty.
- Tightly roll the pastry from the filled side to the empty edge.
- Wrap the roll in plastic wrap and refrigerate for about 30 minutes. Preheat your oven to 400°F (200°C).
- Once chilled, slice the roll into half-inch rounds and place on a baking sheet lined with parchment paper. Beat the egg with a splash of water and brush over each pinwheel. Bake for 15 to 20 minutes, or until puffed and golden.
Notes
For best results, remove as much moisture as possible from the spinach. Can customize with additional ingredients like artichokes or feta cheese.
