- 2 pounds potatoes
- 1/4 cup olive oil
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne pepper (adjust based on your spice preference)
- Tortillas (your choice of flour or corn)
- Toppings: shredded lettuce, chopped tomatoes, shredded vegan cheese, salsa or sauce of choice
Instructions
- Prep the Potatoes: Cut the potatoes into small, bite-sized pieces. Place them in a bowl, cover with water, and let them sit for 30 minutes. After soaking, strain and rinse the potatoes, then pat them dry gently.
- Cook the Potatoes: Heat olive oil in a large pan over medium heat. Add the dried potatoes along with smoked paprika, onion powder, garlic powder, salt, pepper, and cayenne. Stir to coat evenly. Cook, stirring often, until the potatoes are golden brown on most sides.
- Assemble the Tacos: Serve the cooked potatoes on warm tortillas and top with shredded lettuce, chopped tomatoes, shredded vegan cheese, and your favorite sauce or salsa.
Notes
Soaking the potatoes helps them to cook evenly and get crispy on the outside. Customize spices according to your preferences.
