- 2 pounds of potatoes
- 1/4 cup of olive oil
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne pepper
- Tortillas (soft flour or corn)
- Toppings: Shredded lettuce, chopped tomatoes, shredded vegan cheese, salsa or sauce
Instructions
- Cut the potatoes into small bite-sized pieces.
- Soak the potato pieces in a bowl of water for 30 minutes to remove excess starch.
- Drain, rinse, and pat the potatoes dry.
- In a large pan over medium heat, combine the olive oil, potatoes, and spices, mixing well.
- Cook the potatoes, stirring often, until golden brown on most sides.
- Serve the spicy potatoes on warm tortillas, adding your choice of toppings.
Notes
For a crispier texture, consider parboiling the potatoes before cooking. They can be stored in an airtight container in the refrigerator for up to 3 days or frozen for a month.
