Ingredients

  • 1/4 cup of olive oil
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper
  • Tortillas (soft flour or corn)
  • Toppings: Shredded lettuce, chopped tomatoes, shredded vegan cheese, salsa or sauce

Instructions

  1. Cut the potatoes into small bite-sized pieces.
  2. Soak the potato pieces in a bowl of water for 30 minutes to remove excess starch.
  3. Drain, rinse, and pat the potatoes dry.
  4. In a large pan over medium heat, combine the olive oil, potatoes, and spices, mixing well.
  5. Cook the potatoes, stirring often, until golden brown on most sides.
  6. Serve the spicy potatoes on warm tortillas, adding your choice of toppings.

Notes

For a crispier texture, consider parboiling the potatoes before cooking. They can be stored in an airtight container in the refrigerator for up to 3 days or frozen for a month.
