- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar (for topping)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Stir until smooth.
- Pour the wet mixture into the bowl with the dry ingredients. Gently stir until just combined; batter should be slightly lumpy.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown, about 1-2 more minutes.
- Remove the pancake from the skillet and immediately sprinkle with cinnamon sugar.
- Continue with the remaining batter and top each pancake as they come off the heat.
Notes
These pancakes can be served with warm chocolate sauce, whipped cream, fresh fruit, or crispy bacon. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
