Description

Ingredients

  • 6 large flour tortillas
  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups prepared sausage gravy
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess grease.
  3. In a bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour the mixture into the skillet with the sausage and scramble until the eggs are fully cooked.
  4. Lay the flour tortillas flat. Fill each with a portion of the sausage and egg mixture and a sprinkle of cheese. Roll them up and place seam side down in a greased baking dish.
  5. Pour the sausage gravy over the enchiladas.
  6. Sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, until heated through and cheese is bubbly.
  8. Garnish with chopped green onions before serving hot.

Notes

Don’t overcook the eggs; they will continue to cook in the oven. Can be made ahead for convenience.
