- 6 large flour tortillas
- 1 pound breakfast sausage
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 cups prepared sausage gravy
- Chopped green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess grease.
- In a bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour the mixture into the skillet with the sausage and scramble until the eggs are fully cooked.
- Lay the flour tortillas flat. Fill each with a portion of the sausage and egg mixture and a sprinkle of cheese. Roll them up and place seam side down in a greased baking dish.
- Pour the sausage gravy over the enchiladas.
- Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes, until heated through and cheese is bubbly.
- Garnish with chopped green onions before serving hot.
Notes
Don’t overcook the eggs; they will continue to cook in the oven. Can be made ahead for convenience.
