- 3 1/4 cups all-purpose flour (plus more for rolling)
- 1 1/2 tablespoons ground ginger
- 1 1/2 teaspoons cinnamon

- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened (1 1/2 sticks)
- 3/4 cup light brown sugar, packed
- 1/2 cup molasses
- 1 large egg (room temperature)
- 2 1/2 cups powdered sugar
- 4 tablespoons warm water
- 2 tablespoons meringue powder
- 1/2 teaspoon cream of tartar
- Sprinkles of your choice for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Add the molasses and egg to the butter mixture, mixing well until fully incorporated.
- Gradually combine the dry ingredients with the wet mixture, stirring until a dough forms.
- Chill the dough for at least 30 minutes in the refrigerator for easier rolling.
- Flour your surface and roll out the dough to about 1/4 inch thick.
- Cut out shapes using cookie cutters and transfer them to your prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are golden. Allow them to cool on wire racks.
- For royal icing, combine powdered sugar, meringue powder, cream of tartar, and warm water, beating until stiff peaks form.
- Decorate your cooled cookies with the icing and your choice of sprinkles.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze them in a freezer-safe container for up to three months.
