Description

Ingredients

  • 3 1/4 cups all-purpose flour (plus more for rolling)
  • 1 1/2 tablespoons ground ginger
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (1 1/2 sticks)
  • 3/4 cup light brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg (room temperature)
  • 2 1/2 cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • 1/2 teaspoon cream of tartar
  • Sprinkles of your choice for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the molasses and egg to the butter mixture, mixing well until fully incorporated.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until a dough forms.
  6. Chill the dough for at least 30 minutes in the refrigerator for easier rolling.
  7. Flour your surface and roll out the dough to about 1/4 inch thick.
  8. Cut out shapes using cookie cutters and transfer them to your prepared baking sheets.
  9. Bake for 8-10 minutes, or until the edges are golden. Allow them to cool on wire racks.
  10. For royal icing, combine powdered sugar, meringue powder, cream of tartar, and warm water, beating until stiff peaks form.
  11. Decorate your cooled cookies with the icing and your choice of sprinkles.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze them in a freezer-safe container for up to three months.
