- 4 tablespoons unsalted butter, softened
- ⅓ cup packed brown sugar
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch of salt
- 1 cup unsalted butter, softened but cool
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine 4 tablespoons of softened butter, brown sugar, 1½ tablespoons of flour, 2½ teaspoons of cinnamon, and a pinch of salt. Mix until well combined and set aside.
- In a larger bowl, cream together 1 cup of softened butter and 1⅓ cups of granulated sugar until fluffy. Add vanilla, the whole egg, and the egg yolk. Beat until smooth.
- In another bowl, whisk together 2¾ cups of flour, baking powder, cornstarch, and ¼ teaspoon of salt.
- Gradually add the dry ingredients to your butter mixture. Mix until the dough forms.
- Refrigerate the dough for about 30 minutes.
- Roll out the chilled dough and cut it into desired shapes.
- Top each cookie with a dollop of the cinnamon sugar mixture.
- Place on a parchment-lined baking sheet and bake for 10-12 minutes until lightly browned.
- Let them cool before transferring them to a wire rack.
Notes
Serve warm alongside a scoop of vanilla ice cream or a drizzle of cream cheese glaze. Pairs well with coffee or hot chocolate.
