Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs and almond extract, and mix until well combined.
  4. Sift together the almond flour, all-purpose flour, baking powder, and salt, then gradually mix into the wet ingredients until a dough forms.
  5. Chill the dough in the refrigerator for about 30 minutes to firm up.
  6. Scoop tablespoon-sized portions of the dough and roll them into balls.
  7. Place them on the prepared baking sheet, spaced a few inches apart, and slightly flatten each ball.
