Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs and almond extract, and mix until well combined.
- Sift together the almond flour, all-purpose flour, baking powder, and salt, then gradually mix into the wet ingredients until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes to firm up.
- Scoop tablespoon-sized portions of the dough and roll them into balls.
- Place them on the prepared baking sheet, spaced a few inches apart, and slightly flatten each ball.
- Bake in the preheated oven for 10-12 minutes or until lightly golden around the edges.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
