- 2 ½ cups (300 grams) almond flour (blanched, finely ground)
- ½ cup (100 grams) coconut sugar (or brown sugar)
- 1 tbsp flaxseed meal + 2 ½ tbsps water (for flax egg)
- ¼ cup (60 ml) molasses
- ¼ cup (60 ml) melted coconut oil
- 2 tsps ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves (optional)
- ¼ tsp salt
- 1 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the flax egg by whisking together flaxseed meal and water; let it rest.
- In a bowl, combine coconut sugar, molasses, and melted coconut oil. Whisk until smooth.
- In a separate bowl, mix almond flour, baking soda, spices, and salt.
- Fold dry ingredients into the wet mixture until combined.
- Form into uniform cookie balls and place on the baking sheet.
- Bake for 10-12 minutes until the edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For an extra flavor kick, add more ground ginger or incorporate chocolate chips/dried fruits.
