Ingredients

  • ½ cup (100 grams) coconut sugar (or brown sugar)
  • 1 tbsp flaxseed meal + 2 ½ tbsps water (for flax egg)
  • ¼ cup (60 ml) molasses
  • ¼ cup (60 ml) melted coconut oil
  • 2 tsps ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves (optional)
  • ¼ tsp salt
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the flax egg by whisking together flaxseed meal and water; let it rest.
  3. In a bowl, combine coconut sugar, molasses, and melted coconut oil. Whisk until smooth.
  4. In a separate bowl, mix almond flour, baking soda, spices, and salt.
  5. Fold dry ingredients into the wet mixture until combined.
  6. Form into uniform cookie balls and place on the baking sheet.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For an extra flavor kick, add more ground ginger or incorporate chocolate chips/dried fruits.
