Ingredients

  • 2 lemons (juiced and zested)
  • 1 tablespoon olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 4 cups chicken broth
  • 2 cups rice
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In the slow cooker, combine the lemon juice, lemon zest, olive oil, dried thyme, dried rosemary, salt, and pepper.
  2. Add the chicken breasts, ensuring they’re well coated with the lemon herb mixture.
  3. Pour in the chicken broth and give it a gentle stir to mix all the ingredients.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the rice to the slow cooker, making sure it’s submerged in the liquid.
  6. Once done, fluff the rice and chicken with a fork to mix.
  7. If desired, garnish with fresh herbs before serving.

Notes

For enhanced flavor, brown the chicken in a skillet before adding to the slow cooker. Feel free to substitute chicken broth with vegetable broth.
