- 4 chicken breasts
- 2 lemons (juiced and zested)
- 1 tablespoon olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 4 cups chicken broth
- 2 cups rice
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In the slow cooker, combine the lemon juice, lemon zest, olive oil, dried thyme, dried rosemary, salt, and pepper.
- Add the chicken breasts, ensuring they’re well coated with the lemon herb mixture.
- Pour in the chicken broth and give it a gentle stir to mix all the ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the rice to the slow cooker, making sure it’s submerged in the liquid.
- Once done, fluff the rice and chicken with a fork to mix.
- If desired, garnish with fresh herbs before serving.
Notes
For enhanced flavor, brown the chicken in a skillet before adding to the slow cooker. Feel free to substitute chicken broth with vegetable broth.
