  • 2 cups rice
  • 4 cups water
  • 1 tablespoon olive oil

Instructions

  1. In your slow cooker, place the chicken breasts. Pour the lemon juice over them, then add the minced garlic, thyme, rosemary, salt, and black pepper.
  2. Pour the chicken broth over everything, ensuring all the flavors meld together.
  3. Cover and select your cooking time: low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, bring 4 cups of water to a boil. Add the rice, reduce heat, and let it simmer until fluffy, about 18-20 minutes.
  5. Once the chicken is cooked, shred it and mix well with the cooking juices.
  6. Serve the lemon herb chicken over the fluffy rice, garnishing with fresh parsley.
