- 4 chicken breasts (boneless and skinless)
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary

- 2 cups chicken broth
- 1 cup rice (white or brown)
- Fresh herbs for garnish (optional, such as parsley or cilantro)
Instructions
- In your slow cooker, mix together the olive oil, lemon juice, lemon zest, garlic powder, thyme, rosemary, salt, and pepper until well combined.
- Add the chicken breasts into the slow cooker and make sure they’re well coated with the marinade.
- Pour the chicken broth over the top, covering the chicken completely.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- About 30 minutes before serving, add the rice to the slow cooker. Check the liquid level; add more broth if necessary to ensure the rice cooks well.
- Once cooked, fluff the rice gently with a fork and serve the chicken alongside it.
- Finish with fresh herbs if desired for an elegant touch.
