Instructions
- Place the chicken breasts at the bottom of your slow cooker.
- Add the rice, chicken broth, lemon zest, lemon juice, thyme, parsley, garlic, salt, and pepper.
- Stir gently to combine all the ingredients.
- Cover the slow cooker and cook on low for 240 to 360 minutes, or until the chicken is cooked through and the rice is tender.
- Once ready, fluff the rice with a fork and serve, garnishing with fresh herbs if desired.
Notes
For a vegetarian option, use vegetable broth and consider swapping chicken breasts for thighs for a richer flavor. You can enhance flavors by marinating chicken in lemon juice and herbs before cooking.
