Ingredients

  • 1/4 cup fresh lemon juice

  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 cups cooked rice
  • Fresh parsley for garnish

Instructions

  1. In your slow cooker, add the chicken breasts, followed by fresh lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  2. Pour the chicken broth over the top to ensure everything stays moist and flavorful.
  3. Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours.
  4. Once the chicken is fully cooked and tender, shred it right in the slow cooker for maximum flavor absorption.
  5. Serve the lemon herb chicken over a bed of fluffy cooked rice, and garnish with fresh parsley for a pop of color.

Notes

Feel free to substitute the herbs with whatever you have on hand. Fresh herbs work wonderfully if available, and you can adjust the amount of lemon juice to suit your taste.
