Description

A comforting and budget-friendly slow-cooked meal featuring chicken tenders, Yukon gold potatoes, and baby carrots in a savory garlic butter sauce.


Ingredients

  • 1 ½ lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 ½ lbs Yukon gold potatoes (cut into wedges)
  • ½ cup salted butter (melted)
  • 1 Tbsp minced garlic
  • Salt and pepper, to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Add chicken to your slow cooker.
  2. Arrange potato wedges on one side and scatter baby carrots on the other.
  3. In a mixing bowl, combine melted butter, minced garlic, salt, pepper, thyme, and parsley. Stir until well mixed.
  4. Pour the garlic butter mixture evenly over the chicken and veggies.
  5. Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6-8 hours.
  6. Once cooked through, serve hot with your favorite sides.

Notes

Serve with steamed green beans, a light salad, or crusty bread to soak up the garlic butter sauce. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
