  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. In a large bowl, combine the beef cubes, Worcestershire sauce, salt, black pepper, Italian seasoning, and smoked paprika. Toss until the beef is well-coated in the mixture.
  2. Arrange the halved baby potatoes evenly at the bottom of the slow cooker. Drizzle half of the melted butter and olive oil over the potatoes, followed by the minced garlic.
  3. Place the seasoned beef cubes on top of the potatoes and drizzle with the remaining melted butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the beef is fork-tender and the potatoes are fully cooked.
  5. Before serving, gently stir the beef and potatoes to combine. Garnish with fresh parsley.

Notes

Searing the beef cubes before slow cooking adds an extra layer of flavor. Adjust seasoning as needed based on personal taste.
