Instructions
- In a bowl, combine the olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Add the lemon juice to create a flavorful marinade.
- Coat the chicken thighs in the marinade, ensuring they are well covered. Marinate for at least 30 minutes or overnight.
- Transfer the marinated chicken to the slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours, until tender and fully cooked.
- Once the chicken is cooked, shred it in the slow cooker using two forks.
- Serve the chicken in pita bread or over rice, garnished with fresh parsley and your desired toppings.
