- 2 lbs beef chuck roast
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 4 slices of bread, toasted
- 2 cups brown gravy
Instructions
- Season the beef with salt and pepper. Heat a bit of oil in a pan and sear the beef on all sides for added flavor.
- In your slow cooker, combine the seared beef, garlic, onion, Worcestershire sauce, and beef broth.
- Cover and cook on low for 480 minutes or on high for 240 minutes, until the beef is fork-tender.
- Once the beef is done, shred it using two forks and return it to the soup pot to soak up more flavor.
- Meanwhile, boil your cubed potatoes in salted water until tender. Drain and mash them with butter and a splash of milk.
- To serve, layer the toasted bread on a plate, top it with mashed potatoes, and generously spoon over the beef mixture along with rich brown gravy.
Notes
For a lighter option, substitute beef with chicken and use vegetable broth for a vegetarian twist.
