- 2 chicken breasts, sliced
- 2 zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- Soy sauce to taste
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the sliced chicken and cook until browned and fully cooked through, about 5-7 minutes.
- Toss in the minced garlic and sliced bell pepper, cooking for about 2 minutes.
- Introduce the sliced zucchini and soy sauce, cooking for another 3-5 minutes until the zucchini is tender.
- Season with salt and pepper to taste.
- Serve hot over a bed of cooked rice or noodles.
Notes
For a different protein option, substitute chicken with tofu or shrimp. You can also swap the bell pepper for other veggies like broccoli or snap peas.
