Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup lime juice
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped cilantro
  • 1 jalapeño, minced (optional for heat)
  • Salt and pepper to taste

Instructions

  1. Chop the shrimp into small, bite-sized pieces and place in a mixing bowl.
  2. Pour fresh lime juice over the shrimp until fully submerged.
  3. Add diced tomatoes, red onion, cucumber, chopped cilantro, minced jalapeño (if using), and season with salt and pepper.
  4. Combine everything well, cover the bowl, and refrigerate for at least 30 minutes to let flavors meld.
  5. Serve chilled as an appetizer or snack, garnished with additional cilantro or lime wedges.

Notes

Best served cold with tortilla chips or in lettuce cups. Can be stored in the refrigerator for 2-3 days.
