- 14 oz chicken or turkey sausage, sliced 1/2-inch thick
- 2 medium sweet potatoes, peeled and cubed
- 2 cups broccoli florets
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos if gluten-free)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- On the pan, combine the sliced sausage, cubed sweet potatoes, and broccoli florets in a single layer.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant.
- Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper. Let the mixture simmer for 2–3 minutes.
- Pour the honey garlic sauce over the sausage and vegetables, tossing well to coat.
- Roast in the preheated oven for 25–30 minutes, stirring once halfway through, until the sweet potatoes are tender and caramelized at the edges.
- Sprinkle with fresh parsley before serving warm.
Notes
To keep it gluten-free, use coconut aminos instead of soy sauce. Feel free to mix and match vegetables or use different sausages to suit your preferences.
