  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 1 tablespoon unsalted butter (or olive oil)
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or coconut aminos if gluten-free)
  • 1 tablespoon apple cider vinegar
  • Kosher salt and black pepper, to taste
  • 2 tablespoons minced fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. On the pan, combine the sliced sausage, cubed sweet potatoes, and broccoli florets in a single layer.
  3. In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant.
  4. Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper. Let the mixture simmer for 2–3 minutes.
  5. Pour the honey garlic sauce over the sausage and vegetables, tossing well to coat.
  6. Roast in the preheated oven for 25–30 minutes, stirring once halfway through, until the sweet potatoes are tender and caramelized at the edges.
  7. Sprinkle with fresh parsley before serving warm.

Notes

To keep it gluten-free, use coconut aminos instead of soy sauce. Feel free to mix and match vegetables or use different sausages to suit your preferences.
