- 14 oz chicken or turkey sausage, sliced 1/2-inch thick
- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Add the sliced sausage, cubed sweet potatoes, and broccoli to the sheet pan, spreading everything out in a single layer for even cooking.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 30 to 60 seconds until fragrant.
- Stir in the honey, soy sauce (or coconut aminos), apple cider vinegar, salt, and pepper. Let the sauce simmer for 2 to 3 minutes.
- Pour the sauce over the sausage and veggies, tossing to ensure everything is well-coated.
- Roast in the oven for about 25 to 30 minutes, stirring once halfway through, until the sweet potatoes are tender and lightly caramelized.
- Remove from the oven, sprinkle fresh parsley on top, and serve warm.
