Description
Delicious seafood enchiladas featuring shrimp and crab in a creamy, cheesy sauce, wrapped in corn tortillas and baked to perfection.

- 10 corn tortillas
- 2 cups cooked shrimp, chopped
- 1 cup crab meat
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup sour cream
- 1 cup enchilada sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shrimp, crab, cream cheese, half of the shredded cheese, garlic powder, onion powder, taco seasoning, salt, and pepper. Mix well.
- Lightly coat each corn tortilla with enchilada sauce, then spoon the seafood mixture onto each tortilla.
- Roll the tortillas neatly and place them seam-side down in a greased baking dish.
- Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle the rest of the shredded cheese on top.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
- Allow to cool for a minute before serving, topped with sour cream and garnished with cilantro.
Notes
Use fresh shrimp and crab for the best flavor. If preferred, flour tortillas can be used instead of corn.
