- 1 cup dried red lentils
- 3 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin powder
- Olive oil for sautéing
Instructions
- Rinse the lentils under cold water until the water runs clear.
- In a saucepan, bring 3 cups of water to a boil and add the rinsed lentils. Reduce heat to low and simmer for about 15 minutes until soft.
- While the lentils are cooking, heat some olive oil in a separate pan over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
- Stir in minced garlic and cook for an additional minute.
- Once the lentils are cooked, drain any excess water. In a blender, combine the cooked lentils, sautéed onions, garlic, and cumin powder. Pulse until slightly chunky.
- Heat a nonstick skillet over medium heat and lightly grease with oil or butter. Pour half a cup of batter for each pancake and cook until bubbles form, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Serve warm, topped with yogurt or your favorite sauce.
Notes
Let the batter rest for 10-15 minutes for fluffier pancakes. Experiment with different spices or add vegetables for added nutrients.
