Delicious cinnamon rolls featuring a blend of sweet maple and salty bacon wrapped in fluffy dough, perfect for brunch or special occasions.

- 2 1/4 cups all-purpose flour (plus extra for dusting)
- 1 packet (2 1/4 tsp) instant yeast
- 3/4 cup warm whole milk
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg (room temperature)
- 1/2 tsp salt
- 5 slices thick-cut bacon, cooked crispy and chopped
- 1/3 cup brown sugar, packed
- 2 tbsp unsalted butter, softened
- 2 tsp ground cinnamon
- 1/2 tsp smoked paprika (optional)
- Pinch of black pepper
- 1/2 cup pure maple syrup
- 1 cup powdered sugar, sifted
- 2 tbsp unsalted butter, melted
- 1/8 tsp salt
- 1–2 tbsp milk (to adjust glaze thickness)
Instructions
- In a large bowl, whisk together the warm milk, granulated sugar, and instant yeast. Allow it to sit for about 5 minutes until foamy.
- Add in the melted butter, egg, and salt. Stir until well combined.
- Gradually mix in the flour until a soft dough forms.
- Knead the dough by hand for 6-8 minutes (or in a stand mixer for 4-5 minutes) until it’s smooth and elastic.
- Transfer the dough to a lightly greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until it doubles in size.
- While the dough rises, fry the bacon until crispy, drain, and chop it finely. In a medium bowl, combine the brown sugar, softened butter, cinnamon, smoked paprika, and black pepper. Stir in the chopped bacon.
- Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it into a 14″x9″ rectangle, about 1/4-inch thick.
- Spread the filling evenly over the dough, leaving a 1/2-inch border. Roll it up tightly from the longer side, pinching the seam to seal.
- Slice the log into 9 even rolls with a sharp knife or dental floss. Arrange them in a greased 9″x13″ baking dish, cut sides up.
- Cover and let the rolls rise for another 30-40 minutes in a warm place.
- Preheat your oven to 350°F. Bake the rolls for 25-30 minutes until golden brown and cooked through.
- In a small bowl, whisk together the maple syrup, powdered sugar, melted butter, salt, and milk until the mixture is thick but pourable.
- Generously drizzle the glaze over the warm rolls and allow them to cool for 10-15 minutes before serving. Optionally, sprinkle reserved bacon bits on top.
Notes
Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. For freezing, wrap each roll individually and place in a freezer-safe bag.
