Description

Ingredients

  • 2 1/4 cups all-purpose flour (plus extra for dusting)
  • 1 packet (2 1/4 tsp) instant yeast
  • 3/4 cup warm whole milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg (room temperature)
  • 1/2 tsp salt
  • 5 slices thick-cut bacon, cooked crispy and chopped
  • 1/3 cup brown sugar, packed
  • 2 tbsp unsalted butter, softened
  • 2 tsp ground cinnamon
  • 1/2 tsp smoked paprika (optional)
  • Pinch of black pepper
  • 1/2 cup pure maple syrup
  • 1 cup powdered sugar, sifted
  • 2 tbsp unsalted butter, melted
  • 1/8 tsp salt
  • 12 tbsp milk (to adjust glaze thickness)

Instructions

  1. In a large bowl, whisk together the warm milk, granulated sugar, and instant yeast. Allow it to sit for about 5 minutes until foamy.
  2. Add in the melted butter, egg, and salt. Stir until well combined.
  3. Gradually mix in the flour until a soft dough forms.
  4. Knead the dough by hand for 6-8 minutes (or in a stand mixer for 4-5 minutes) until it’s smooth and elastic.
  5. Transfer the dough to a lightly greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until it doubles in size.
  6. While the dough rises, fry the bacon until crispy, drain, and chop it finely. In a medium bowl, combine the brown sugar, softened butter, cinnamon, smoked paprika, and black pepper. Stir in the chopped bacon.
  7. Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it into a 14″x9″ rectangle, about 1/4-inch thick.
  8. Spread the filling evenly over the dough, leaving a 1/2-inch border. Roll it up tightly from the longer side, pinching the seam to seal.
  9. Slice the log into 9 even rolls with a sharp knife or dental floss. Arrange them in a greased 9″x13″ baking dish, cut sides up.
  10. Cover and let the rolls rise for another 30-40 minutes in a warm place.
  11. Preheat your oven to 350°F. Bake the rolls for 25-30 minutes until golden brown and cooked through.
  12. In a small bowl, whisk together the maple syrup, powdered sugar, melted butter, salt, and milk until the mixture is thick but pourable.
  13. Generously drizzle the glaze over the warm rolls and allow them to cool for 10-15 minutes before serving. Optionally, sprinkle reserved bacon bits on top.

Notes

Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. For freezing, wrap each roll individually and place in a freezer-safe bag.
