  • 2 cloves garlic, minced

Instructions

  1. In a large pot, cook the Italian sausage over medium heat, breaking it apart into small pieces, for about 5-7 minutes until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and transparent, about 3-4 minutes.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil over high heat.
  4. Add the tortellini and Italian seasoning, cooking according to package instructions (5-7 minutes).
  5. Stir in the fresh spinach, cooking for another 1-2 minutes until wilted.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and top with grated Parmesan cheese, if desired.
