- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, cook the Italian sausage over medium heat, breaking it apart into small pieces, for about 5-7 minutes until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and transparent, about 3-4 minutes.
- Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil over high heat.
- Add the tortellini and Italian seasoning, cooking according to package instructions (5-7 minutes).
- Stir in the fresh spinach, cooking for another 1-2 minutes until wilted.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and top with grated Parmesan cheese, if desired.
