Ingredients

- 1 lb sausage (Italian or your choice)
- 4 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
- Chives or parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until it’s nicely browned.
- Add the chopped onion and minced garlic; sauté until the onion is translucent.
- Stir in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil.
- Lower the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Mix in the heavy cream and cheese if you’re using it, heating through until it’s warmed but not boiling.
- Season generously with salt and pepper to taste.
- Serve hot, garnished with fresh chives or parsley for a pop of color.
