Description

Ingredients

  • 1 lb sausage (Italian or your choice)
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Chives or parsley for garnish

Instructions

  1. In a large pot, cook the sausage over medium heat until it’s nicely browned.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil.
  4. Lower the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Mix in the heavy cream and cheese if you’re using it, heating through until it’s warmed but not boiling.
  6. Season generously with salt and pepper to taste.
  7. Serve hot, garnished with fresh chives or parsley for a pop of color.
