Description

A delightful dessert combining the tartness of fresh raspberries with the creaminess of whipped cream, resulting in a light and airy treat perfect for any occasion.


Ingredients

  • 2 1/3 teaspoons (7 grams) powdered gelatin (1 packet Knox)
  • 3 tablespoons cold water
  • 10 oz (2 1/2 cups) fresh or frozen raspberries (thawed)
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 812 fresh raspberries (for garnish)
  • Extra whipped cream (optional, for garnish)

Instructions

  1. Pour the cold water into a small bowl and sprinkle the gelatin over the top. Set aside to bloom for 5-10 minutes.
  2. In a medium saucepan, combine the raspberries, granulated sugar, and lemon juice. Cook over low heat, stirring frequently, until the sugar dissolves.
  3. Carefully strain the syrup through a fine mesh strainer into a heat-proof bowl to eliminate seeds.
  4. Return the syrup to the saucepan, add the bloomed gelatin, and warm over low heat until the gelatin dissolves. Remove from heat and pour into a clean, large bowl. Allow it to cool.
  5. When the raspberry syrup is cool but not cold, whip the heavy cream with the powdered sugar on low speed until soft peaks form. Increase to medium speed and whip until stiff peaks form.
  6. Fold a quarter of the whipped cream into the raspberry syrup until well blended. Then gently fold in the remaining whipped cream until no white streaks remain.
  7. Divide the mousse into 4-6 individual serving dishes. Cover and refrigerate for at least 2 hours to set.
  8. Before serving, garnish with whipped cream and fresh raspberries.

Notes

Store in the refrigerator for up to 3 days. Cover individual serving dishes tightly or place them in an airtight container.
