Description

A delightful tart featuring creamy ricotta, sweet pumpkin, and savory caramelized onions, all in a crispy pie crust.


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups pumpkin puree
  • 1 cup ricotta cheese
  • 1 onion, thinly sliced
  • 4 slices bacon, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon and set aside.
  3. Add olive oil and thinly sliced onions to the skillet. Cook until caramelized, around 10-15 minutes.
  4. In a bowl, mix together pumpkin puree, ricotta cheese, chopped sage, salt, and pepper.
  5. Roll out your pie crust and fit it into a tart pan.
  6. Spread the pumpkin mixture evenly over the crust.
  7. Top with caramelized onions and crispy bacon.
  8. Brush edges of the crust with the beaten egg.
  9. Bake for 30-35 minutes, until golden and set.
  10. Allow to cool slightly before slicing and serving.

Notes

Serve warm, garnished with fresh sage. Pairs well with a green salad or roasted vegetables.
