- 1 pie crust (store-bought or homemade)
- 2 cups pumpkin puree
- 1 cup ricotta cheese
- 1 onion, thinly sliced
- 4 slices bacon, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh sage, chopped
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon and set aside.
- Add olive oil and thinly sliced onions to the skillet. Cook until caramelized, around 10-15 minutes.
- In a bowl, mix together pumpkin puree, ricotta cheese, chopped sage, salt, and pepper.
- Roll out your pie crust and fit it into a tart pan.
- Spread the pumpkin mixture evenly over the crust.
- Top with caramelized onions and crispy bacon.
- Brush edges of the crust with the beaten egg.
- Bake for 30-35 minutes, until golden and set.
- Allow to cool slightly before slicing and serving.
Notes
Serve warm, garnished with fresh sage. Pairs well with a green salad or roasted vegetables.
