- 1 lb Italian sausage (spicy or mild)
- 1 can black beans, drained and rinsed
- 1 can fire-roasted tomatoes
- 1 cup pumpkin puree
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened.
- Add the Italian sausage, cooking until browned.
- Stir in the chili powder, cumin, salt, and pepper, cooking for another minute.
- Add the black beans, fire-roasted tomatoes, pumpkin puree, and broth.
- Bring to a simmer, reduce heat, and let cook for 20-30 minutes, stirring occasionally.
- Adjust seasonings as needed and serve hot with optional toppings.
Notes
Serve with cornbread or over rice. This chili stores well and tastes even better the next day.
