Description

A hearty and flavorful pumpkin chili that’s perfect for cool days, packed with nutrients and easy to make.


Ingredients

  • 1 lb Italian sausage (spicy or mild)
  • 1 can black beans, drained and rinsed
  • 1 can fire-roasted tomatoes
  • 1 cup pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened.
  2. Add the Italian sausage, cooking until browned.
  3. Stir in the chili powder, cumin, salt, and pepper, cooking for another minute.
  4. Add the black beans, fire-roasted tomatoes, pumpkin puree, and broth.
  5. Bring to a simmer, reduce heat, and let cook for 20-30 minutes, stirring occasionally.
  6. Adjust seasonings as needed and serve hot with optional toppings.

Notes

Serve with cornbread or over rice. This chili stores well and tastes even better the next day.
