- 4 ½ cups all-purpose flour (spooned and leveled, plus extra if needed)
- 1 tablespoon sugar
- 2 ¼ teaspoons instant yeast
- 1 teaspoon salt
- 1 ¾ cups warm milk (or water, around 110°F)
- 2 tablespoons melted butter
- 9 cups water
- ½ cup baking soda
- 1 large egg (mixed with 1 tablespoon of water for egg wash)
Instructions
- In the bowl of a stand mixer, combine flour, sugar, yeast, warm milk, melted butter, and salt. Mix using the dough hook on medium speed for about 4-5 minutes, until the dough is smooth. If the dough sticks, gradually add more flour as necessary.
- Cover the dough with a clean kitchen towel and let it rise in a warm spot for 30-60 minutes, or until it has doubled in size.
- Preheat your oven to 450°F. Line two baking sheets with parchment paper.
- In a large pot, bring water and baking soda to a boil.
- Divide the dough into 12 equal pieces. Roll each piece into a rope about ¾ inch thick, then cut them into 1-2 inch bites.
- Drop the bites into the boiling water for 30 seconds before transferring them to the prepared baking sheets, ensuring each bite has space to expand.
- Brush the tops with the egg wash and sprinkle salt generously on top.
- Bake for 12-14 minutes, or until they are golden brown.
Notes
For best results, pair with honey mustard or cheese dip. Store in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
