A creamy and comforting Potato Leek Soup that is easy to make and perfect for any occasion.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 leeks, washed and sliced
- 4 Yukon Gold potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh herbs (thyme or parsley) for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and leeks, sauté until soft, about 5 minutes.
- Stir in diced potatoes and cook for 2-3 minutes.
- Pour in the broth and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Garnish with fresh herbs before serving.
Notes
Serve warm with crusty bread and a salad. You can adjust the thickness by adding more or less broth.
