- 2 medium russet potatoes (about 1 pound), peeled and cubed
- 1 cup warm water (110°F)
- 2 teaspoons active dry yeast
- 1 tablespoon sugar
- 4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 2 tablespoons olive oil
Instructions
- Boil the cubed potatoes in salted water until tender (15-20 minutes). Drain and mash until smooth, letting cool slightly.
- In a small bowl, combine warm water, yeast, and sugar. Stir gently and let sit for 5-10 minutes until foamy.
- In a large mixing bowl, combine mashed potatoes, yeast mixture, flour, salt, and olive oil, mixing until a dough forms.
- Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic.
- Place kneaded dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
- Once risen, punch down the dough, shape it into a loaf, place it in a greased loaf pan, cover, and let rise again for 30-45 minutes.
- Preheat oven to 375°F (190°C) while the loaf rises.
- Bake for 35-40 minutes, until golden brown and hollow when tapped. Let cool on a wire rack.
Notes
Can substitute russet potatoes with Yukon Gold for a different flavor and texture. Pair with soup or salad for a hearty meal.
