  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • Pink food coloring (to desired color)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing and lining it with parchment paper.
  2. In a bowl, mix together the flour, cocoa powder, and granulated sugar until evenly combined.
  3. Pour the melted butter into the dry ingredients, followed by the eggs and vanilla extract. Stir gently until just combined—don’t overmix!
  4. Spread the chocolate batter evenly into the prepared baking dish.
  5. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean. Allow it to cool completely.
  6. While it’s cooling, prepare the pink coconut topping by mixing the shredded coconut, powdered sugar, milk, and desired amount of food coloring in a separate bowl.
  7. Once the cake base has cooled, spread the pink coconut mixture evenly on top.
  8. Cut into bars, serve, and enjoy!
