- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 2 cups powdered sugar
- 2 tablespoons milk
- Pink food coloring (to desired color)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing and lining it with parchment paper.
- In a bowl, mix together the flour, cocoa powder, and granulated sugar until evenly combined.
- Pour the melted butter into the dry ingredients, followed by the eggs and vanilla extract. Stir gently until just combined—don’t overmix!
- Spread the chocolate batter evenly into the prepared baking dish.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean. Allow it to cool completely.
- While it’s cooling, prepare the pink coconut topping by mixing the shredded coconut, powdered sugar, milk, and desired amount of food coloring in a separate bowl.
- Once the cake base has cooled, spread the pink coconut mixture evenly on top.
- Cut into bars, serve, and enjoy!
