- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic (minced)
- 1/2 cup Soy Sauce
- 1/3 cup Pineapple Juice
- 2 tbsp Honey or Brown Sugar
- 1 tbsp Rice Vinegar or Apple Cider Vinegar
- 1 tsp Cornstarch
- 1 tbsp Water
- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- 1/2 whole Red Bell Pepper (diced)
- 1/4 cup Green Onions (chopped)
- Sesame seeds (optional)
- Crushed red pepper (optional)
Instructions
- In a large skillet or wok, heat the olive or sesame oil over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Toss in the chicken pieces and cook until golden brown.
- In a bowl, combine soy sauce, pineapple juice, honey, rice vinegar, cornstarch slurry, and water. Stir until well combined.
- Pour the sauce over the cooked chicken, then add rice, pineapple chunks, and red bell pepper.
- Stir gently to coat everything in the sauce, and let it simmer for 5-7 minutes.
- Finish with green onions and sprinkle with sesame seeds before serving.
Notes
For added texture, toss in cashews or peanuts. Experiment with different proteins like shrimp or tofu.
