  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (optional)
  • Crushed red pepper (optional)

Instructions

  1. In a large skillet or wok, heat the olive or sesame oil over medium heat.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Toss in the chicken pieces and cook until golden brown.
  4. In a bowl, combine soy sauce, pineapple juice, honey, rice vinegar, cornstarch slurry, and water. Stir until well combined.
  5. Pour the sauce over the cooked chicken, then add rice, pineapple chunks, and red bell pepper.
  6. Stir gently to coat everything in the sauce, and let it simmer for 5-7 minutes.
  7. Finish with green onions and sprinkle with sesame seeds before serving.

Notes
