A delightful twist on the classic grilled cheese sandwich, infused with fresh pesto and gooey cheese.
Ingredients
Scale
- 2 slices of bread (sourdough or ciabatta)
- 2 slices of cheese (mozzarella or cheddar)
- 2 tablespoons of pesto
- Butter (for grilling)
Instructions
- Heat a skillet over medium heat.
- Spread pesto on one side of each slice of bread.
- Place one slice of bread in the pan, pesto side down.
- Top with cheese, then lay the other slice of bread on top, pesto side up.
- Butter the outer sides of both slices of bread.
- Grill until golden brown and the cheese is melted, about 3-4 minutes on each side.
- Slice and serve hot.
Notes
Cut into triangles or halves for a fun presentation. Pairs well with tomato soup or a fresh salad.
