Description

A delightful twist on the classic grilled cheese sandwich, infused with fresh pesto and gooey cheese.


Ingredients

  • 2 slices of bread (sourdough or ciabatta)
  • 2 slices of cheese (mozzarella or cheddar)
  • 2 tablespoons of pesto
  • Butter (for grilling)

Instructions

  1. Heat a skillet over medium heat.
  2. Spread pesto on one side of each slice of bread.
  3. Place one slice of bread in the pan, pesto side down.
  4. Top with cheese, then lay the other slice of bread on top, pesto side up.
  5. Butter the outer sides of both slices of bread.
  6. Grill until golden brown and the cheese is melted, about 3-4 minutes on each side.
  7. Slice and serve hot.

Notes

Cut into triangles or halves for a fun presentation. Pairs well with tomato soup or a fresh salad.
