A gourmet twist on a classic grilled cheese sandwich, elevated with flavorful pesto and melted cheese.
Ingredients

- 2 slices of bread (your choice: sourdough, whole wheat, or a hearty white)
- 2 tablespoons of pesto (store-bought or homemade)
- 2 slices of cheese (mozzarella, cheddar, or your favorite melting cheese)
- Butter (for grilling)
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- On the non-pesto side of one slice, place the cheese slices.
- Top with the other slice of bread, pesto side down, creating a sandwich.
- Heat a skillet over medium heat and melt a little butter.
- Once the butter is melted, carefully place the sandwich in the skillet.
- Grill for about 3-4 minutes until golden brown. Check your heat level; you don’t want to burn the bread before the cheese is melted!
- Flip the sandwich and grill the other side for another 3-4 minutes, ensuring the cheese is gooey and the bread is beautifully golden.
- Remove from the skillet, slice, and serve warm!
Notes
Serve with a side of salad, sweet potato fries, or tomato soup. Reheat leftovers in a skillet to maintain crispiness.
