Description

A gourmet twist on a classic grilled cheese sandwich, elevated with flavorful pesto and melted cheese.


Ingredients

  • 2 slices of bread (your choice: sourdough, whole wheat, or a hearty white)
  • 2 tablespoons of pesto (store-bought or homemade)
  • 2 slices of cheese (mozzarella, cheddar, or your favorite melting cheese)
  • Butter (for grilling)

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. On the non-pesto side of one slice, place the cheese slices.
  3. Top with the other slice of bread, pesto side down, creating a sandwich.
  4. Heat a skillet over medium heat and melt a little butter.
  5. Once the butter is melted, carefully place the sandwich in the skillet.
  6. Grill for about 3-4 minutes until golden brown. Check your heat level; you don’t want to burn the bread before the cheese is melted!
  7. Flip the sandwich and grill the other side for another 3-4 minutes, ensuring the cheese is gooey and the bread is beautifully golden.
  8. Remove from the skillet, slice, and serve warm!

Notes

Serve with a side of salad, sweet potato fries, or tomato soup. Reheat leftovers in a skillet to maintain crispiness.
