Description
An elevated twist on a classic grilled cheese, infused with vibrant flavors of fresh pesto and gooey melted cheese.
Ingredients

- 2 slices of bread (sourdough or whole grain)
- 2 slices of cheese (cheddar, mozzarella, or a blend)
- 2 tablespoons of pesto (homemade or store-bought)
- Butter or olive oil for grilling
Instructions
- Heat a skillet over medium heat.
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- Place a slice of cheese on the pesto side of one slice of bread, then cover it with the second slice, pesto side down.
- Spread butter or drizzle olive oil generously on the outside of the sandwich.
- Grill for 2-3 minutes on each side, until golden brown and the cheese has melted.
- Remove the sandwich from the heat, slice it in half, and serve warm.
Notes
For a crispy crust, use a mix of butter and olive oil for grilling. Adding garlic powder to the butter or oil can enhance flavor.
