Description

Delicious and healthy peanut butter cookie pie bars made with Greek yogurt and oat flour.


Ingredients

  • 1 cup oat flour
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix together the oat flour, baking powder, and salt.
  3. In another bowl, combine the peanut butter, honey (or maple syrup), Greek yogurt, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 20-25 minutes or until the edges are golden and the top is crackled.
  7. Allow to cool before cutting into bars.

Notes

Store in an airtight container for up to 3 days at room temperature or refrigerate for about a week. Freezing is also an option for longer storage.
